Panjeeri

Ingredients

Panjeeri
  • 6 tbs. Ata or Suji
  • 2 tbs. ghee
  • 2 tbs. coconut (Narial)-gated
  • 2 tbs. Pistachio (Pistay)-grated
  • 2 tbs. almond (Badam)-grated
  • 100 grm. (Makhanay)
  • 50 grm. (Gond)
  • 1 tbs. (Char Maghaz)
  • ½ tsp. dry dates (Chhuwaray)-chopped
  • 2 tbs. dry fig (injeer)-chopped
  • 2 tbs. cashew nuts (Kaju) crushed
  • ¼ tsp. nutmeg (Jaiphal)
  • 4 tbs. sugar
  • 6 pcs. green cardamom (Chhoti Ilaichi)
  • ½ tsp. dry ginger (Sounth)-grated

Method:

  1. Fry Ata/Suji, Makhanay, Gond in ghee till light brown.
  2. Add all other ingredients mix well and fry for few minutes.

Serving: 4 persons

Til Laddu


Ingredients:

Til Ladoo Recipe
Til Laddu
  • 2 cups white sesame seeds
  • 1/4 cup peanuts
  • 3/4 cup soft jaggery
  • 1 tsp ghee

Method:

  1. Roast sesame seeds and peanuts separately
  2. Let it cool
  3. Crush the peanuts
  4. Mash jaggery till soft.
  5. Put in a large heavy pan.
  6. Add ghee and heat, till it melts and starts bubbling.
  7. Add peanuts and sesame seeds, take off fire.
  8. Mix well till well blended.
  9. While still hot, shape into pingpong ball size ladoos, with moist hands (apply ghee on your hands).
  10. Allow to cool completely, before storing in airtight container.

Malai Barfi

Ingredients:

Malai Barfi Recipe
Malai Barfi Recipe
  • 1/2 cup condensed milk
  • 250 gms. paneer (cottage cheese)
  • 2-3 drops kewra essence
  • 1/4 tsp. yellow color

Method:

  1. Mash paneer (cottage cheese).
  2. Add condensed milk and cook on slow flame, stirring continously.
  3. Cook till thick and sides leave.
  4. Add essence and remove from flame.
  5. Mix well.
  6. Pour on plate. Cool.
  7. Cut into different shapes.
  8. Sprinkle powdered elaichi and decorate with silver sheets.
